Slow Cooker Alphabet Soup

I’m pretty much in disbelief that we’re well beyond the halfway point in October. How is Halloween next week? I’ll be honest though, in many ways I’m totally okay with that because what’s coming soon is way better than Halloween… Thanksgiving!!
Next to the 4th of July, Thanksgiving is probably one of my favorite holidays. I know we’re supposed to say it’s about sharing, togetherness, family, giving, etc but let’s be honest… it’s about yummy food and any holiday that revolves around food is totally okay in my book.
Pie. So. Much. Pie.
Ditch the turkey and make room for more pie. Okay, and stuffing. Because I love stuffing. Carbs and fruit. That’s not asking for too much is it?

Chicken soup is a classic cold weather comfort food. Not only is it perfect to warm you up, but it’s a favorite for when you’re not feeling so great. It’s one of those items that likely brings back childhood memories for so many. I remember my mom frequently making chicken or turkey soup in the cooler months. She’d throw in whatever she had on hand. It always amazed me that she knew just what to add to make it delicious and smell amazing.
Simple, warm, flavorful, family friendly and best of all…easy enough for any night of the week! Always a big plus!
I’m a huge fan of noodles in my chicken soup. So, I decided to put a fun kid friendly twist on a classic by adding alphabet pasta!

Slow Cooker Alphabet Soup
Ingredients
- 1 lb boneless chicken breast uncooked
- 3 cloves garlic
- 1 C yellow onion chopped
- 3/4 C carrots sliced
- 3/4 C celery chopped
- 1 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp dried thyme
- 1 bay leaf
- 5 - 6 C chicken broth
- 1 C alphabet pasta
Instructions
- Add trimmed chicken, vegetables, seasonings and 5 cups of chicken broth to the bowl of a 5-6 quart slow cooker. Cook on high for 4 hours, or low for 8 hours.
- When the initial cook time is up, remove and discard the bay leaf. Carefully remove and shred chicken, then return to slow cooker. Add alphabet pasta and cook for an additional 30 minutes. Add additional chicken broth as desired for a more brothy soup.

Love those bowls and the soup inside. I think my little Hudson will be fascinated with this soup. (He’s five, has Down syndrome, and loves the alphabet!) Letters are his thing. I will definitely make this for him.

We all love chicken noodle soup but I know my kids would love it even more if it were alphabet! I love Thanksgiving and Christmas the best and I would have to be on team apple.
