As sad as I will be to see this summer go, I’m ridiculously excited for fall… per usual. It’s my favorite time of year. Apples galore, pumpkin goodies, caramel everything and… so much comfort food! It also happens to be the official start of soup season. I totally just made that up, but it’s kind of true too. Most people pack away their slow cookers, only pulling them out again once the weather turns cold. I will on occasion still make soup in the summer, but I always … always, always make it in the colder months. Expect plenty of comforting family friendly slow cooker recipes in the next 6-7 months.
The other great thing about fall… all of the shows are starting back up! There are so many new ones I’m looking forward to, but for now, I’m enjoying Camp Cutthroat again. I don’t even want to imagine having to deal with the sabotages the contestants have to deal with. They’re seriously brutal sometimes, but definitely amusing to watch… which is probably at least part of the point! If you haven’t seen it yet, you should definitely give it a try!
I’m a huge fan of making soup in my slow cooker. HUGE fan! I actually prefer it over the stovetop method. I can press a button and let it do it’s thing, with me going about my business, not having to monitor it or stir constantly. It can be ready when I want it to be. And, big bonus, it makes the house smell a-ma-zing all day long!
This is one of those recipes that’s perfect all year long. You can make it in the summer with fresh sweet corn straight from the cob. And, you can make it all fall through spring. It’s comforting, warm and flavor packed! Plus, if you choose to add the optional jalapeños and red pepper flakes, you get a nice spicy kick!

Slow Cooker Chicken and Corn Chowder
Ingredients
- 1 C yellow onion chopped
- 1 C red bell pepper chopped
- 1 jalapeño seeds removed and diced - optional
- 1/3 C celery chopped
- 3 cloves garlic minced
- 3 1/2 C potatoes small bite sized pieces
- 2 : 15oz cans whole corn kernels drained (3C total)
- 1 1/4 tsp white pepper
- 2 1/2 tsp salt
- 1 tsp dried thyme
- 1/8-1/4 tsp red pepper flakes optional
- 2 bay leaves
- 1 lb boneless skinless chicken breast uncooked and fully thawed
- 3 C chicken broth
- 1 C heavy cream
- 1 1/2 Tb cornstarch
- 2-3 slices cooked bacon for topping
- Jalapeño slices for topping
Instructions
- To the bowl of a 5-6 quart slow cooker, add vegetables, seasonings, chicken, chicken broth and bay leaves. Cover and cook on high for 4 hours or on low for 8 hours. When the intial cook time is up, remove and discard bay leaves. Remove chicken breast, shred or chop into desired sizes and set aside. Whisk cornstarch into heavy cream until smooth. Pour heavy cream mixture into slow cooker, stir to combine. Return chicken to slow cooker, stir gently to disperse. Replace the cover and continue to cook on high for an additional 30-40 minutes. Serve warm with bacon crumbles and jalapeño slices.

I haven’t personally frozen it, but typically soups and chowders do freeze quite well. Just be sure to stir well while reheating. Enjoy!
Do you cook the chicken before? Or can you put it in the crockpot uncooked
Raw (uncooked) chicken should be added at the beginning of the cook cycle. Enjoy!
