Slow Cooker Chicken Pie Soup
A hearty slow cooker chicken pie soup, loaded with chicken and vegetables. This comforting dish is perfect for chilly months!
This weekend I did the dreaded yearly swapping of seasonal clothes. This also meant checking to see what winter stuff still fits the kids. I’m sure that sounds absolutely ridiculous if you’re currently experiencing 90+ temps. But, at least around here, if you wait too long to get new winter gear (aka snow-boots/pants/gloves etc) you’re out of luck. So, I’m trying to get a head start on things and get it out of the way while it’s on my mind.
Not to mention the fact that it’s not completely unheard of to have snow in October here. Halloween blizzard anyone? Seriously. Worst Halloween ever. At least in my opinion. I’m sure the kids loved it.
I’d like at least a full two months to enjoy my regular boots before swapping over to snow boots. I know snow is inevitable, but I’m hoping we don’t get slammed this year. Only time will tell though!

I’m always excited for slow cooker and soup season. Sure, it goes hand in hand with the cooler months, but I’m okay with that as long as I get to enjoy soups like this! This chicken pie soup is the perfect way to warm up on a cold Fall or Winter day. Not only is it super easy to make, it’s insanely delicious. It’s also quite possibly one of our favorite soups to date. Which means it will absolutely be in my fall/winter recipe rotation!
A comforting and classic entree, turned into a hearty slow cooker soup, loaded with chicken and vegetables. All of the flavor you expect from chicken pot pie, but better… and easier!

Slow Cooker Chicken Pie Soup
Ingredients
- 1 lb boneless chicken breast
- 3/4 C onion
- 1/2 C celery
- 3/4 C carrots
- 7 oz can peas, drained (roughly 3/4C)
- 7 oz can corn, drained (roughly 3/4C)
- 3 1/2 C russet potatoes
- 3 cloves garlic, minced
- 2 1/2 tsp salt
- 1 tsp ground black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 3 1/2 C chicken broth
- 1 1/2 C heavy cream
- 1/3 C all purpose flour*
Instructions
- Trim chicken breast of any fat. Chop onion, celery and carrots into small pieces. Peel and chop potatoes into 1-inch pieces. Drain peas and corn. Mince garlic.
- To the bowl of a 5-6 quart slow cooker add prepared chicken and vegetables, along with salt, pepper, thyme, bay leaf and chicken broth. Cover and allow to cook on high for 4 hours.
- Remove and discard bay leaf. Remove chicken breast, shred and return to slow cooker.
- In a medium bowl whisk together flour and heavy cream until smooth. Pour into slow cooker, stirring to combine. Replace cover and continue cooking for an additional 30-45 minutes.
- Serve warm.

The chicken should always be added to the slow cooker chilled (straight from the refrigerator) or room temp, never frozen.

I made this today and it was amazing! I doubled the recipe for our large family of 9. All the kids loved it and couldn’t get enough. It was very filling and we actually had some leftovers. I can’t be sure as I don’t recall the exact spot it came up to in my own slow cooker. However, my best guess is no, doubling would not fit in a 6-quart. Keep in mind that is only a guess but a larger slow cooker or two units would be a safer bet.
The flavors perfectly mimicked chicken pot pie but the texture did not. Yes, I know this is “soup” but the texture kept making me think “chicken in hot milk.” The recipe really hits in out of the ballpark if you thicken the dairy/flour mixture before adding to the pot. We had increased all the solid ingredients a tad (because packages of chicken breast come in 3’s for some odd reason) so we used 1.5 cups of Half-and-Half, 1 cup of milk, and 1/2 cup of flour. This not only improved the texture but it lowered the fat content.
We also used frozens peas and corn which next time we’ll add for the last 30 mins with some green beans. If you’re going to do some fussing toward the end, dumping in these veggies at the end makes no difference in your labor or timing.
This was my first slow cooker recipe and it was an excellent one to start with. Thanks!
Personally I wouldn’t want to eat traditional chicken pie as a soup. That isn’t a soup, this is, so the texture shouldn’t match perfectly. It’s the flavors of chicken pie in soup form, definitely not sitting in hot milk either. It sounds as though something may have gone wrong on your end for it to end up like that. However, I’m glad you were still able to tweak it to your liking.
Random question….does anyone else have a problem with chicken made in crock pot coming out dry, or rubbery? I have tried a few recipies (including this one) and I just can’t seem to figure out what I am doing wrong.
You may be cooking too long (if you’re cooking for a longer setting) or your slow cooker may be cooking hotter than most. You definitely shouldn’t end up with dry or rubbery chicken, especially in a soup type dish.
Made this last night for reheating today (my hubby works evenings) – with a few variations. I used turkey instead of chicken – I have lots leftover from Thanksgiving two weeks ago, and substituted skim milk with cornstarch for heavy cream. It has more of a clear colour and is very thick due to the cornstarch, but its delicious! I can’t wait for hubby to try it this evening. I love my slow cooker and am trying to use it more, but need easy recipes – I don’t love cooking but love comfort food. This one is wonderful and eliminates the unhealthy aspect of pie crust! Thank you!

I made this today as written, but with frozen peas and 2 large frozen boneless skinless chicken breasts. It turned out awesome. Not rubbery or dry at all.

This looks delicious! Does it make enough servings for 4 adults?
Serving size is 6-8, so even with larger servings it should serve 4.
I have made this soup twice now and both times, the entire family devoured it! It defines comfort food and is so delicious! I bought a frosen bag of organic peas, corn, carrots and green beans and threw it in there at the start, along with organic chicken tenders I cut into bite-size pieces before adding to the crockpot. The only thing I add at the end is a block of cream cheese right after the milk/flour mixture. It adds a good creaminess that I love. FYI – Periodically throughout the year our family eats vegan (Lent). I plan on modifying this recipe by eliminating the chicken, using vegetable broth and using almond milk. I think it will still be yummy! Thank you!

Just found this link from a ’12 easy Slow Cooker recipes on busy nights’ link on MSN! So glad I did! It looks delicious and I can’t wait to add it to our “dinner rotation”. I love using my slow cooker! And I see this is from October and you live in NH. You said, “I hope we don’t getted slammed with snow this year”, or something like that. Sigh…if only you knew then, just how bad we would be slammed with snow this year! I’m in MA and SO over it! Here’s to Spring!

Is it possible to cook this on a lower cooking setting? I will be in class from 12:30-5 pm and was wondering if I could throw it together in the morning on a low setting?
Yes, it can be cooked on low for 8 hours or until the potatoes are tender.
This was just delicious. I am retired and this is my wife’s last year working. So, I have been doing the cooking. We ate the whole pot ourselves and when the leftovers were finished two days later, my wife asked me to make it again. This kind of soup is best with homemade bread and butter, so I made bread too.
The only thing that I could not do like the recipe said was prep it in 15 min.. It takes at least an hour. I don’t think it can be prepared in 15 min. unless the all ingredients are cut/chopped and sitting on the counter next to the slow cooker ready to put in. But even taking an hour it is worth it.
I forgot to say that I used fresh frozen corn and peas, about 12oz,each. Add the peas with the flour and cream or they will be over cooked. The next time I make this, I am going to add some broken up bacon pieces.

It’s always recommended not to add anything frozen to a slow cooker as it will significantly lower the overall temperature and increase the risk for bacteria to linger and grow. If frozen vegetables are what you prefer, thaw them fully before adding to the slow cooker. Enjoy!!

I thought this recipe was the best ever! I added a little oregano and made some homemade croutons to serve as the crust and sprinkled them on top. I just made this soup! Following recipe exactly. With a couple of additional ingredients..I added some poultry seasoning and also added a chicken gravy packet to four before mixing with heavy cream. IT IS SO DELICIOUS 😍👅 thanks Rachel 😘
