Slow Cooker Creamy White Chicken Chili

Okay Gilmore Girls fans…We’re officially less than two months away from the premiere! As if you needed me to tell you, but I’m just that excited. And now lots of cute clips of the cast keep popping up, which is only adding to my excitement. I love the behind the scenes shots and interviews. Such a fun tease leading up to the show! I re-watched the entire series earlier this year but since Netflix removed Psych, which we’d been watching from the beginning, I’m seriously tempted to watch some of Gilmore Girls again. It’s one of those shows that I can watch over and over again and never get sick of it. Everyone has a few of those. Another of mine… Friends. I can catch an episode on a whim and still enjoy every second of it.
It’s funny how Fall hits and suddenly comfort food is all you think about… along with apple and pumpkin everything! Or at least that’s how it’s been for me! I’m so ready for all things comfort food. Don’t get me wrong, I’ll definitely miss warmer lazy summer days, grilling and all of the fresh summer produce. But… hearty warm food wins out. I can’t change the weather, so I’ll happily embrace the food to go along with the season.
I have always loved white chicken chili and creamy soups. So… I combined two of my favorite comforting dishes into one amazing meal!
The result..
A thick and creamy white chicken chili! This hearty and flavorful meal is packed full of chicken, veggies, beans… and cheese! I’m positive this will be made many times in the coming months.
A perfect meal to warm up with during the cooler months! And, it’s so easy to whip up in the slow cooker, you can’t pass this one up!

Slow Cooker Creamy White Chicken Chili
Ingredients
Chili:
- 1 1/2 lb boneless skinless chicken breast uncooked and fully thawed
- 1 C yellow onion chopped
- 1 C green bell pepper chopped
- 3 cloves garlic minced
- 1 : 8.75oz can corn drained (roughly 1C)
- 3 : 15oz cans norhern white beans drained and rinsed well
- 2 tsp salt
- 1 tsp gound white pepper
- 1/2 tsp cumin
- 1 tsp dried oregano
- 1/4 - 1/2 tsp cayenne pepper
- 2 bay leaves
- 3 C chicken broth
- 6 oz white cheddar cheese freshly shredded
- 1 C heavy cream
- 3 Tb all purpose flour
Toppings:
- Seasoned tortilla strips
- Green onions chopped
- ground black pepper
- Baguette slices to serve with
Instructions
- To the bowl of a 5-6 quart slow cooker, add chicken, vegetables, beans, seasonings, bay leaves and broth. Cover and cook on high for 4 hours, or on low for 8 hours.
- When the initial cook time is up, remove and discard bay leaves. Remove chicken breasts and shred with forks, set aside. Add cheese to slow cooker, stirring until melted. Combine heavy cream and flour, whisking until smooth. Add heavy cream mixture to slow cooker, stirring gently until combined. Return shredded chicken to slow cooker. Cover and continue cooking for an additional 30-45 minutes or until desired thickness is reached.
- Serve warm with seasoned tortilla strips, chopped green onions and a dusting of ground black pepper. Serve with baguette slices on the side.

My slow cooker is out, and I don’t plan on putting it away until spring shows her beautiful little head. I’ve been making hearty soups, and this recipe is perfect Sunday football. I’m so excited for the return of Gilmore Girls, brings back great teenage memories when I didn’t have a care in the world.

can you use already cooked shredded chicken for this recipe?
It should be okay, just be sure not to add it until towards the end of the cooking cycling, since you just want it to be warmed up.
This white chicken chili sounds delicious. What could I substitute for all that cream (cholesterol problems). I know it would not be as good with whole milk, but do you think that would work. If not, I am going to dive in and use the cream
I am planning to have the lasagne soup on the weekend after thanksgiving. Easy to serve yourself while you enjoy family company.
You could try blending a portion of the beans with some chicken broth instead. It will give a thick and creamy texture without using heavy cream.
I realize this is a slow cooked meal and I have a slow cooked. But can this also be done a fast way on those nights you don’t have all that time?
That’s the beauty of slow cooker recipes, they’re best for those busy nights! Toss everything in early in the day and you don’t have to worry about dinner. However, you could attempt to do it as a stovetop, if you’re familiar with general timing and process for stovetop soup. I don’t have specific timing or instructions for you, for that method though. Good luck.
