I noticed a huge change this year in the way the holiday sales typically run. In the past, Black Friday was always the day to hit up sales. And even then, it was obviously actually on Friday… until it wasn’t, and clearly spilled over into Thanksgiving day. And then there was obviously Cyber Monday. Many deals to be had online. This year though, the deals started a week before Black Friday and haven’t let up. Cyber Monday wasn’t really a huge deal like it has been in the past either. And, though some deals are truly the best on Black Friday, there have been many percentage based deals or random items that have popped up with even better pricing since then. I’m certainly not complaining about all of the discounts. It is a bit frustrating to shop though. Like with Old Navy… let’s say today is 20% off. Will tomorrow be nothing or will it be up to 35%? It’s like playing the retail lottery. You win some and you lose some I guess. Will this be the trend moving forward… deals for a solid month?

I did a dumb thing the other day when baking a batch of cookies. A cookie tray, fresh out of the oven and clearly piping hot. An oven mitt on one hand and not the other, because you only need one hand to take the cookies out of the oven. Right? Of course I went to tap the tray over a smidge but with the wrong hand. And you know how that goes… in that micro-second there’s a realization that you’ve done something really dumb. And once you feel the pain, it’s basically too late. You’re already burnt. Shockingly enough… and thankfully… it wasn’t as bad as I expected, especially given that it was on my finger. Days later it’s almost as if it didn’t happen. Fingers crossed it’s another good stretch of time before that happens again!

My kids cannot stop eating these cookies. They’re seriously obsessed. Like mother like child(ren)… they love their gingerbread flavored food as much as I do! And I promise you will too… so long as you love gingerbread goodies.

Sparkling Gingerbread Cookies

Soft and chewy gingerbread cookies with a sparkling sugar coating. A fun and flavorful treat to enjoy during the holiday season!

Ingredients
 

  • 1/2 C unsalted butter, softened
  • 1/2 C granulated sugar
  • 1/4 C light brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/4 C molasses
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 1/4 C all purpose flour
  • 1/3 C white sanding sugar, for coating

Instructions
 

  • In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Mix in egg and vanilla, scraping the bowl as needed. Mix in molasses, followed by spices, salt and baking powder. Add flour one cup at a time until fully combined and no streaks remain. Chill dough for 15-30 minutes or until firm but manageable. Dough may also be chilled overnight or for up to 2 weeks and frozen for up to a year. If chilling dough longer than 30 minutes, allow dough to sit at room temperature until just scoopable but not soft. 
  • Preheat oven to 350°F. Prepare a baking sheet with a silicone baking mat or parchment paper. 
  • Add sanding sugar to a small bowl. 
  • Using a medium cookie scoop, scoop and shape dough into 1 1/2-inch balls. Roll in sanding sugar. Space dough 1-2 inches apart on prepared baking sheet. Repeat with remaining dough. 
  • Bake for 15 minutes. Allow cookies to sit for 1-2 minutes before transferring to a wire rack to cool completely. 
  • Store cookies in an airtight container.
