This summer has completely flown by. We still have a bit more than two weeks left of summer break before school officially starts back up here, but I know it’ll be here in practically a blink of an eye. I’m not ready for it. Don’t get me wrong, I’m ready in the sense that we have all of our supplies and such. I’m just suddenly finding myself full of emotions over this coming year and the end of this summer. It’ll be the last year my kids are ever all in the same school together. That’s huge. It’s both sad and exciting. So many last things for my oldest and so many new things in the not so distant future. It’s basically the end of them all being little together. I want to freeze time and not move forward for a bit. Is that so much to ask?

I’m going through the same amazement with Lucy, our golden pup. She’s only 5 months old but she’s grown and changed so much in such a short time. I had no idea dogs grew this fast. It’s amazing and sad. When we first brought her home, she couldn’t even jump up onto the couch because she was so little. Now, she’s stealing things off of the kitchen counter and jumping over gates. She’s a lovable troublemaker. So smart and so incredibly silly. Too smart and clever for her own good sometimes!

I’m a girl that has and will forever love Fall but given the fact that I really don’t want to see this summer end… I’m clinging onto it in a serious way for now…

Summer flavors will be here to stay for a few more weeks at least. I’ll happily enjoy strawberries year-round but they scream summer to me. And if I had to choose between any fruity flavored ice creams, strawberry would always come out on top. It’s hands down a favorite. Amazing smooth and creamy, full of sweet and juicy strawberry chunks or with other mix-ins. I’ll gladly enjoy it any way…and often times, even with a scoop or two of strawberry sauce on top. There’s no such thing as too much strawberry!

Since it’s still hot all across the country, it seemed fitting to share a new flavor-packed ice cream. A perfect treat to cool down with on these final weeks of summer break!

Strawberry Cookies and Cream Ice Cream

Creamy homemade strawberry ice cream with sweet strawberry chunks and vanilla cookie pieces throughout! A fun frozen treat for summer or any time!

Ingredients
 

  • 16 oz strawberries, fresh or thawed
  • 3/4 C plus 2Tb granulated sugar, divided
  • 1 Tb lemon juice
  • 2 C heavy cream
  • 1 C whole milk
  • Pinch salt
  • 1/2 tsp vanilla extract
  • 4 egg yolks
  • 1 1/4 C vanilla cookie pieces

Instructions
 

  • Hull and remove stems from strawberries. Add half of the strawberries to a small food processor or blender. Process until smooth. Set aside. Chop the remaining strawberries into small chunks. Toss with 2 tablespoons granulated sugar and lemon juice. Cover and chill overnight.
  • Add 1 cup heavy cream and vanilla to a medium bowl, with a mesh strainer set on top. 
  • Add remaining heavy cream, whole milk, salt and remaining 3/4 cup granulated sugar to a medium saucepan, set over medium heat. Stir to dissolve sugar. Continue to stir and cook until mixture begins to steam. 
  • Whisk together yolks in a small bowl. Slowly drizzle 1 cup steaming mixture into yolks, while whisking continuously. Transfer mixture back into saucepan. Continue to cook over medium heat, stirring frequently, until mixture coats the back of a wooden spoon or rubber spatula. Pour through mesh strainer into reserved heavy cream. Cool to room temperature over an ice bath. Stir in puréed strawberries. Cover and chill overnight. 
  • Remove strawberry chunks from the refrigerator. Lightly mash. Add excess strawberry liquid to chilled custard base. Transfer chilled custard base to an ice cream maker. Churn according to manufacturer's directions. 
  • Meanwhile prepare 1 1/4 cup cookie pieces. If using sandwich cookies, remove and discard filling. 
  • During last 10 minutes of churning, begin adding strawberry chunks and cookie pieces. Optionally, cookie pieces may be stirred in by hand after the churning process is complete. 
  • Transfer ice cream to a freezer safe container. Freeze for 4-6 hours or overnight. 

Notes

Recipe serves roughly 6-8, yields 1 1/2 quarts.
