Our sweet Lucy has been with us for less than two weeks and she’s already amazed me so much. Not only is she the worlds best snuggler, she’s also learning remarkably fast. I expected training a puppy to be a chore, but I suppose it depends on the time you have to commit and the individual puppy. She’s already telling us when she needs to go out, so I bought one of those fabric hangers with a bunch of bells on them. Within a few hours she had already picked up that she should ring it to tell us. Nipping on the other hand… that’s taking some time but I imagine with all puppies, that’ll get better in time.

I learned quickly that taking her out most mornings, and definitely wet days, was going to be a chore. It wasn’t so much the issue of going out with an umbrella and she doesn’t fight going out… it’s actually the opposite, she’d love to stay out and play! But my feet were getting soaked and I couldn’t always get my rain boots on quick enough. I found these amazing rain boot style shoes called Sloggers. They’re apparently aimed more towards gardening but they totally suit my needs – waterproof, easy to get on and comfy. Win all around! I could wear them all day! They’ve become my go to dog walking shoe… soccer and t-ball game shoe! Those fields can be pretty sloppy at times! I’m almost enjoying this cold dreary weather we’re having just so I have an extra excuse to wear them!

I adore ice cream. If you asked me to pick just one flavor, I’d never be able to give you a definitive answer. I love so many… coffee, mint chocolate chip, cookies and cream, chocolate, classic vanilla, fruity ice creams and most definitely strawberry!

When it comes to strawberry ice cream, there’s no doubt about it, homemade is always better. And it has to have a bold strawberry flavor with at the very least, small pieces throughout of real fruit… chunks are even better.

I’ve already shared a classic strawberry ice cream and a dairy free strawberry coconut milk ice cream, so I needed to put a twist on one of my absolute favorite flavors this year…

Strawberry Meringue Ice Cream

Creamy homemade strawberry ice cream with swirls of fluffy meringue throughout. A fun frozen treat, bursting with flavor!

Ingredients

Ice cream base:

  • 3 C strawberries
  • 1 C granulated sugar divided
  • 1 Tb lemon juice
  • 2 C heavy cream
  • 1 C whole milk
  • pinch salt
  • 1/2 tsp vanilla extract
  • 4 large egg yolks

Meringue:

  • 1 egg white room temperature
  • 1/4 C granulated sugar
  • 1/8 tsp cream of tartar
  • 1/4 tsp vanilla extract

Instructions

  • Prepare strawberries by removing stems and chopping into halves or quarters. Add to a medium saucepan. Toss with 1/4 cup granulated sugar and lemon juice. Cook over medium heat until soft. Lightly mash strawberries with a potato masher. Transfer to a clean bowl. Cover and chill overnight.
  • Add 1 cup heavy cream and vanilla to a medium bowl, with a mesh strainer set on top. Set aside. 
  • Add remaining heavy cream, whole milk, salt and remaining 3/4 cup granulated sugar to a medium saucepan. Stir to dissolve sugar. Cook over medium heat until steaming. Pour 1 cup warm milk mixture into whisked yolks, while whisking continuously. Transfer egg mixture to saucepan. Continue to cook over medium heat, stirring frequently, until mixture coats the back of a wooden spoon. Pour through mesh strainer into reserved heavy cream. Cool to room temperature over an ice bath. Cover and chill overnight. 
  • When you're ready to churn your ice cream, prepare meringue. In a heatproof bowl set over simmering water, whisk together egg white, granulated sugar and cream of tartar. Whisk until egg whites are warm to the touch and sugar is completely dissolved. Mixture should be frothy. Remove from heat. Beat, using a hand mixer until stiff peaks form. Add vanilla during last 30 seconds of mixing. Transfer meringue to a piping bag or plastic bag with the tip snipped off. 
  • Combine ice cream custard base with strawberry mixture. Transfer mixture to your ice cream maker. Churn according to manufacturer's directions. 
  • Transfer ice cream to a freezer safe container, large spoonfuls at a time, while adding swirls of meringue throughout. Gently swirl with a knife if desired. Do not over combine, swirls should be visible. 
  • Freeze for 4-6 hours or overnight. 

Notes

Recipe serves 4-8, yields 1 1/2 quarts.
