Strawberry Pineapple Fruit Salsa with Cinnamon Tortilla Chips

We finally had gorgeous weather for soccer, this past weekend. I mean truly perfect weather. Mid-high 60’s in the morning, bright and sunny with a nice wind to keep the bugs away. Unfortunately this also meant my first sunburn of the season. Oops! Hopefully it’s better sooner than later but the first one is almost always the worst.
And just like that, the weather flip-flopped just in time for another morning activity outside the following day. Cold, windy and drizzly. No fun. But we managed. I bundled up like it was winter because I can’t handle the cold, or at least not when it shouldn’t be cold. That’s when it’s worse than it being cold in the winter. I’m shocked at the reports I keep seeing of areas still getting snow. It’s mid May! This shouldn’t be happening.
I got my first S’Well water bottle last week. I’m basically in love. The first time I saw it in stores, I thought it was just another bottle. This is the real deal though. I even did a hot car test to really see if it worked. They claim the bottles will keep hot liquid hot/warm for 12 hours and cold for 24. I tested with ice water, leaving it in the car on a hot day for 7-ish hours. There was still ice left when I tested and the temperature had barely changed! It’s absolutely my new favorite bottle at this point.
I’m pretty much obsessed with all things pineapple and strawberry lately… next to lemon. Can you blame me? They’re incredible flavors and incredible fruit! Perfect for snacks, drinks, desserts and on occasion, a perfect addition to certain savory dishes!

Strawberry Pineapple Fruit Salsa with Cinnamon Tortilla Chips
Ingredients
- 2 C pineapple chunks from 1 pineapple
- 2 C strawberries chopped
- 8 : 8-inch flour tortillas
- 6 Tb unsalted butter melted
- 6 Tb granulated sugar
- 1 1/2 tsp cinnamon
Instructions
- Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
- Combine cinnamon and sugar in a small bowl. Set aside.
- Slice tortillas in half and then each half into thirds, creating 6 equal triangles per tortilla. Arrange tortillas on prepared baking sheets. Brush with melted butter. Sprinkle with cinnamon-sugar mixture. Bake for 10-12 minutes. Transfer cooked tortilla chips to a clean baking sheet or plate to cool. Repeat with remaining tortillas as needed.
- In a large bowl, toss together pineapples and strawberries. Serve immediately with cinnamon tortilla chips or store in an airtight container in the refrigerator until ready to serve. Will keep for several days, or up to a week.

Your weather sounds like ours. Thursday and Friday were beautiful and this weekend, today and tomorrow are cloudy, cold and rainy. I just want it to stay warm for a while! HI! I was wondering how long these chips will keep? can i make them 3-4 days before the party and stir them in a Ziploc or airtight container?
