So I’m totally over all of the talent shows going on this summer. Completely done with them. I have some new favorites, like Scandal. Ahh… I posted a single image of the disc on Instagram and was warned how addictive it is. No joke, I watched 4 episodes straight through the other night and I have another disc showing up today. You know what I’ll be doing tonight! I mean how to do stop after watching an episode or two? It’s just not possible.

I’m also both addicted to and annoyed with Under the Dome. It’s like… really? A dome? And there’s the typical drama you’d have under these circumstances but then the questions. I don’t know. I can’t explain it. Sometimes I just want to turn it off but then I can’t. Maybe it’s because there’s nothing else to watch.

Oooh but wait… Whose Line Is It Anyway? is back on! OMG. Most hilarious show ever. If you haven’t watched, you need to. It’s funny and definitely has it’s completely inappropriate moments, but that’s why you watch after the kids are in bed. Not that they’d get the jokes anyway!

I’ve been obsessed with a few other things… specifically, ice cream and pizza. Clearly.  And no, this isn’t the last you’ll see of either in the coming weeks. I can’t help it! I’m sorry. Okay, I’m not. I mean they’re classics and variety is good.

I’ve kind of always wanted to make an Alfredo pizza, especially given my distaste for tomatoes. This is kind of dreamy in a super special way, but you don’t have to hate tomatoes to love this! You just have to love creamy goodness. Because that’s what this is. A creamy Alfredo sauce topped off with seasoned chicken, broccoli and two varieties of cheese!

Back up just one second… the crust. It’s amazing. It’s similar to the garlic bread pizza I made only not quite. It smells absolutely amazing and tastes even better.

Broccoli and Chicken Alfredo Garlic Bread Pizza

Homemade garlic bread pizza dough, topped off with a creamy Alfredo sauce, seasoned chicken and broccoli.

Ingredients
 

Pizza dough:

  • 1 C warm water
  • 2 1/4 tsp active dry yeast
  • 1/2 tsp sugar
  • 2 1/2-3 C all purpose flour
  • 1/2 tsp salt
  • 3/4 tsp garlic powder
  • 1/2 tsp basil
  • 2 Tbsp Parmesan cheese, finely grated

Pizza toppings:

  • Alfredo sauce, homemade or store bought
  • 1 chicken breast
  • 1-2 C broccoli florets
  • 1-2 C whole milk mozzarella, freshly shredded
  • 3 Tbsp Parmesan cheese

Instructions
 

  • Dissolve yeast and sugar in warm water. Allow yeast to activate for 5-10 minutes. In the bowl of a stand mixer, with dough hook attached, combine remaining dough ingredients. When yeast is ready, turn mixer on low and slowly pour yeast mixture in. Increase speed to medium, adding additional flour a spoonful at a time as needed until the dough is no longer sticky. Shape into a smooth ball and transfer to a lightly greased bowl. Cover and rise in a warm location until doubled in size.
  • Prepare chicken with salt and pepper using your desired method, such as an indoor grill pan or large frying pan. Cook until no longer pink in the middle, cool slightly and shred. If using homemade Alfredo sauce, prepare that now as well.
  • Preheat oven to 425°F. Lightly grease a baking sheet. Shape dough into desired size and shape. Bake for 5 minutes. Coat with Alfredo sauce, leaving 1/2-1 inch exposed crust. Top off with shredded chicken and broccoli. Sprinkle with mozzarella and Parmesan cheese. Bake for 12-15 minutes or until cheese is lightly browned.
  • Slice and enjoy.
