I’ve been seeing pumpkin recipes popping up left and right for well over a month now. I’ve been protesting posting anything pumpkin related simply because I felt it was too soon. There wasn’t enough apple love. I was seriously sad with the lack of new apple recipes floating around. October is apple month after all so clearly people should have embraced the fruit of the month and had a blast with it. Pumpkin was the obvious winner and has been in so many eyes. That’s definitely not how I feel (eh hem… I have a serious  obsession with apples) but now that we’re less than a week from Halloween I’m totally okay with making and sharing pumpkin recipes. I’ve been craving apple pie since I ran out of apples sometime last year. No I’m not even remotely kidding. I love apple pie. I crave it. I need it. And when the good apples aren’t around it’s pure torture. I know this isn’t pie, but honestly it’s just as good if not better depending on how you look at things.

You see… from what I’ve learned, a lot of people fear making pie. Just like a lot of people fear making cheesecake. Neither are to be feared at all, seriously. I may not be able to hold your hand through the process but I can offer tips. However, you need zero hand holding or encouragement for this dish. Like I said… just as good as pie or better but it’s not pie! It’s easier by probably 1000x. That helped settle my craving for pie much faster. Continue Reading

The other week I spotted a recipe that immediately called to me. Okay, it didn’t just call to me. It screamed at me… ‘make me!’ And that’s just what I did. How often does that happen to you? It’s rare that I spot a recipe that calls to me so strongly I make it within the week. I have to admit, it’s probably only because it’s an apple pie and that is hands down my absolute favorite kind of pie. Usually I bookmark recipes for sometime down the road figuring I’ll eventually get to it when the time is right or the mood strikes me. I love apples. I’m sure I’ve proclaimed my love for them easily several times. I love them plain. I love them covered in caramel, maybe even dipped in chocolate, though preferably not candy coated. But I especially love them in a pie. I simply cannot get enough apple pie. It’s delicious. Fall is a long ways away but I’m looking forward to jumbo local farm fresh apples. So juicy and amazing.

I’ve never made apple turnovers or hand pies of any kind. After seeing a French apple turnover recipe on Fine Cooking I couldn’t resist trying them. I decided to change it up just slightly by adding additional flavor but the biggest change was shape. In honor of Valentine’s Day I decided to make heart shaped pies. It’s really simple as long as you have some giant heart shaped cookie cutters and a rolling pin. Those are the only special tools needed. So simple, anyone can make this… and you’ll be glad you did! Several weeks ago we went to the apple farm and got a lot of apples, plus some pumpkins for painting and carving. The apples were the important part of the trip. I wanted and needed apples, lots and lots. We skipped apple picking this year and went straight to the farm market. Bins full of giant apples. And even more bins overflowing with pumpkins. Looking at all of those pumpkins I really can’t help but question… how was there a canned pumpkin shortage? I know a lot more goes into it than just having any old pumpkin though.

The apples, oh the wonderful giant and juicy apples. We got a 1/2 bushel of all giant cortland apples. They’re my favorite so it was a must. Plus, I find that they’re amazing for baking and of course just eating. I’ve been trying to resist just eating them. They’re so good to just sit and eat, sliced or not. But I’ve been trying to use as may as possible in my baking adventures. Before long we’ll have to start eating apples for meals so they’re consumed before they go bad! Continue Reading
