A week ago we went to the apple farm and came back with nearly 20 pounds of apples. I’m not even remotely kidding. I’m in apple heaven. I love this time of year. Sure you can get apples year round but they’re not local and super fresh. In fact, the apples that are shipped in sometimes taste funny which really bums me out. I wish apples could be frozen like other fruit and enjoyed year round. Boy would that save me some frustration and sadness in the off season! Maybe someday someone will come up with a solution outside of canning applesauce or apple pie filling. Neither is the same as a fresh juicy apple. Continue Reading

In hindsight it would have been the quicker option and my belly would have thanked me for filling it sooner than later. Soft Pretzel Bites

Yesterday I wanted something salty. As much as something chocolatey sounded good it just wasn’t going to hit the spot. Salty was a must. I’m not one for the sweet and salty bit so I wasn’t about to combine saltiness with chocolate. Big no-no for me. Someday maaaybe I’ll give it a try but I just can’t bring myself to do it. Just like I can’t bring myself to get on board with bacon and sweets.

It was a toss up between attempting homemade chips or pretzel bites. I had all of the ingredients for pretzel bites, including course sea salt so I was sold! Soft delicious bite size pieces of homemade pretzels sprinkled with course salt and dipped in mustard. Yum!! Okay you don’t have to dip yours in mustard, that’s just my preference. I know some like a cheese sauce instead and I’m sure that would go equally well but I didn’t have any and wasn’t up to making some so yellow mustard for dipping would have to do the trick. Pico De Gallo

When I was planning Josh’s birthday party menu I remembered seeing a post for pico de gallo on Ree Drummond’s site (aka The Pioneer Woman). She makes everything look so easy and festive. I figured I’d give it a try. What’s the worst that happens, it doesn’t work out? I waste ingredients *shivers* and have to toss everything in the trash? Yes, that is probably the worst that could happen.

I did do a bit of playing around the day of, you may find you want to do that too. Add a bit more of this, a little less of that. Play with the recipe. You can’t go wrong. Kick it up with some more jalapeno or a bit more lime juice if you please. There is no wrong way to make this. It’s quick and really easy. So easy everyone should make this instead of buying a jar of salsa. That is of course as long as you can find fresh ingredients. Fresh is best. Please do not use pickled jalapenos. They will work in a pinch, but they have far less heat and will ultimately change the final flavor. Continue Reading
