I’d like to be crafty. I try to be crafty on occasion… sometimes it works and sometimes it doesn’t. My oldest is very crafty. So, together we’ve been working on a costume she needs to wear for school. This week we put together half of it. If you follow me on Snapchat (bakedby.rachel) then you may have gotten a sneak peek of it. Now, we need to work on a paper mache helmet. Eek! I haven’t done any kind of paper mache crafting since I was probably in elementary school. This could either turn out amazing or really bad. Do you have any tips?! I’m all ears!

Like many, we’ve been NCIS fans for ages. We got behind for a while and decided to binge watch from the beginning on Netflix to catch up. So. Much. Fun. We’ve been caught up for this season, but now I’m feeling kind of sad about the show. I won’t give any spoilers, in case you’re not caught up… I’ll just say someone major leaves and that bums me out. I’m not sure how it’ll ever be the same without this character. I’ll keep watching, hoping it remains just as good. I do have my doubts though. The more I think about it, the more I realize how many other shows this has happened in lately too. Characters are dropping like flies! Why?! At least there are a ton of new shows coming out next Fall to look forward to. I have my eye on Designated Survivor. I have high hopes for it since I really enjoyed Kiefer Sutherland in 24.

Have you heard Justin Timberlake’s new song? I’m seriously hooked. It’s just so fun. I want to dance around the kitchen whenever I heard it.

As you can see… I’m still very much obsessed with pineapples. It’s like I’m trying to make up for lost time. All of those years when I was young, missing out on an amazing fruit. I can’t seem to get enough of it!

I’ve always been a huge fan of fruit with my ice cream or slices of cake. I usually lean towards roasted strawberries, but decided it was time for a change.

This may be my new favorite topping for desserts and breakfast!

Bright and bold tropical pineapple compote. A simple and flavorful addition to your morning yogurt, spooned on top of your favorite creamy ice cream or served alongside a moist slice of cake…. or enjoy by the spoonful! However you plan to enjoy it, just be sure to take an extra spoonful while you can! Everyone is going to want some!

Easy Pineapple Compote

An easy recipe for homemade pineapple compote. A sweet addition to your favorite spring and summer desserts, or as a topping to your morning yogurt!

Ingredients
 

  • 1 pineapple, or 2 1/2-3C pineapple chunks
  • 1 C granulated sugar
  • 3/4 C pineapple juice
  • 1 Tb cornstarch
  • 1/4 C water

Instructions
 

  • In a medium saucepan over medium-low heat, combine pineapple chunks with sugar and juice. Stir to dissolve sugar. In a small bowl, whisk together cornstarch and water. Cook pineapples for 5-10 minutes or until pineapples are just beginning to soften. Stir in cornstarch mixture and bring to a simmer. Cook until liquid has thickened, an additional 5-10 minutes. 
  • Transfer mixture to a clean storage container. Use immediately or allow to cool completely before covering and storing in the refrigerator. Will keep for a week or more, stored in an airtight container in the refrigerator. 
  • Add to your favorite dessert or breakfast item.
