Isn’t it weird how vacation times are so vastly different around the country? The vacation weeks seem to vary from March through April. When is spring break in your area? We’re on school vacation here this week finally, of course we don’t get out of school until mid to late June in New Hampshire. I’m hoping I manage to stay as sane as possible with three rambunctious children in the house, we’ll see how well that goes. I think at least a few outings are a must in addition to running around outside to burn off extra energy. But have you ever noticed how running around outside doesn’t always tire kids out? Sometimes they seem to only have more energy. They’re like little energizer bunnies. Speaking of which… where did the energizer bunny commercials go?

Also, everyone is finally back to good health! Thanks for all of the well wishes! It took us a solid 2 weeks to get rid of the pink eye from everyone completely, since it spread from one kid to the next. Oy… I truly hope we never have to go through that again.

I made this salad for the Mr a few weeks back. And he of course had to wait to eat this until after I took some photos. I felt rushed so he could eat it, so I’m blaming that on the crappy pictures. I swear these don’t do the salad justice. It’s such a simple salad but it’s so worth making, especially if you love buffalo sauce or blue cheese dressing. I cheated and used store bought dressing. Maybe sometime I’ll make my own but since we rarely use blue cheese dressing, this is the better option for now. The chicken is of course coated in buffalo sauce and then a seasoned panko breadcrumb mixture prior to baking.

I have this weird requirement when it comes to recipes with buffalo sauce, they must include celery. So to keep with tradition, I went a non-traditional route for this salad and shaved celery and carrots. It gave a unique texture to the standard salad fixings. Let’s of course not forget the blue cheese crumbles, which are totally necessary here even on top of the blue cheese dressing.

Buffalo Chicken Tender Salad with Blue Cheese Dressing

Your favorite bar snack in salad form, full of flavor and crunch.

Ingredients

  • 1 chicken breast trimmed and pounded thin
  • 1/4 C buffalo sauce
  • 1/2 C Panko breadcrumbs
  • 1/4 tsp ground black pepper
  • 1/2 tsp celery seed
  • 1/2 tsp onion powder
  • Chunky blue cheese dressing to taste
  • 6 oz Romain lettuce
  • 1/4 C blue cheese crumbles
  • 1 carrot
  • 1 celery stalk

Instructions

  • Preheat oven to 375°F. Line a baking sheet with parchment paper.
  • Add buffalo sauce to one bowl. Add Panko breadcrumbs, pepper, celery seed and onion powder to another small bowl.
  • Slice chicken into small pieces. Coat well in buffalo sauce, before coating with seasoned Panko mixture. Place on prepared baking sheet. Bake for 25-30 minutes or until center reads at least 165 degrees.
  • Shave carrots and celery into long strips. Toss romain, carrots and celery in chunky blue cheese dressing. Add blue cheese crumbles and buffalo chicken tenders prior to serving.

    I still haven’t developed a taste for blue cheese but I would love these buffalo chicken tenders! Panko makes the best crispy coating for chicken!

    Spring break started March 15th here in CO, crazy! We get done the last week of May as well, but go back mid August. So I guess there is a trade off no matter what!

    This salad is calling my name, yum! You’re right, when I have the kids outside, I would think they would be exhausted after running around for hours, but they never want to come in. They have a ton of energy and wear me out, lol.

    Glad to hear the family is well once again. Kids here go to school until the last week of June as well but their Spring break is the second week of March.
