Caramel Apple Shortbread Parfaits
The ultimate seasonal parfait. Layers of homemade whipped cream, tender cinnamon apples, sweet caramel sauce and shortbread cookie crumbs.
My apple obsession doesn’t stop with just pies, cookies and bread. Nope. There is always plenty of apple love to go around.
When I teamed up with Walkers Shortbread to bring you a fun post, I knew I had to put a fun seasonal twist on things and try something I hadn’t done yet. Why not pair my love for apples with a classic cookie?!
This is basically a deconstructed apple pie. All of the flavor without the fuss!
Layers of sweet caramel, homemade whipped cream, apple pie filling and Walkers shortbread crumbs. The perfect bite every time!
I love baking with brands I trust. Did you know that Walkers Pure Butter Shortbread is made from only four simple ingredients; butter, flour, salt and sugar? No preservatives! Caramel Apple Shortbread Parfaits
Ingredients
- 3 C apples
- 6 Tbsp brown sugar
- 3/4 tsp cinnamon
- 1 C heavy cream
- 1/4 C powdered sugar
- 1 tsp cornstarch
- 1 tsp vanilla extract
- Caramel sauce
- 5.3 oz Walkers Pure Butter Shortbread
Instructions
- Preheat oven to 375°F.
- Peel and slice apples into 1/2-inch cubes. Toss with brown sugar and cinnamon. Transfer to a small glass baking dish. Cover with foil and bake for 15-20 minutes or until apples are tender.
- Meanwhile, prepare whipped cream. Combine heavy cream, powdered sugar, cornstarch and vanilla. Beating on medium-high speed until stiff peaks form. Chill until ready to use.
- Blend shortbread in a food processor until only fine crumbs remain.
- Using desired serving dishes, layer dessert as follows: whipped cream, caramel sauce, apples, shortbread and repeat. Top off with whipped cream and a drizzle of additional caramel sauce.
- Keep chilled until ready to serve.

Those thick layers of caramel are killing me! I never have any self-control when it comes to caramel. It’s why I refused to buy any or make my own… I’d have to hide all of my spoons because the entire jar would be gone in about 20 minutes! And that homemade whipped cream too… So amazing. :) Pinned!
You don’t mention it in the recipe, but do you cool your apple mixture before assembling? Otherwise it seems like it would melt the whip cream and not look as nice as pictured.
It should be cooled to at least room temperature or it can be made ahead and chilled prior to assembling.

Can you make these ahead of time in the morning and save for dessert after dinner or will they get soggy? Thanks
I wouldn’t recommend making them too far ahead of time but same day prepping should be fine.
