You know those days that food is about to go bad because you may or may not have forgotten it was in the fridge. Now you have to think of something to make with it? You want to make something different for a change, even if super simple. Simple is good and sometimes even better than the elaborate. I always feel there is a time and a place for elaborate meals and in my life that’s rare. The kids just don’t allow it. I’d need to make my elaborate meals during prime sleeping hours and you know how precious those quiet sleeping hours are for everyone but especially with young children. I need my zzz’s.

Okay, getting a tad off track here.

So that chicken, yeah… the chicken that’s about to go bad. Well, for all I know it could be fine for several more days but with meat I’d rather not chance it and wait it out until it stinks. Usually when chicken is on it’s last days I toss it in a container to marinate for grilling. It’s a simple fix that will extend the life for a few more days at most before we can get around to eating it. Other times it’s a do or toss out situation.

This time I had a plan. I wanted a chicken sandwich with bacon. Simple and tasty for sure. Oh and believe me those few bites I was able to have were delicious. In the future I’ll totally add more bacon because more bacon is always a good thing. The reason for only getting a few bites. Well… lil man wasn’t cooperating that day so it was a walk by and grab a bite kind of lunch. I wanted to eat it fresh but he wasn’t having it. That’s life though!

Chicken Sandwich

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Super easy and simple chicken sandwich with your favorite sandwich toppers!


  • favorite bread or roll
  • 1-2 slices bacon
  • 1 chicken breast
  • lettuce
  • spicy mustard


  • Prepare chicken by trimming fat and reducing thickness by pounding down or slicing in two, set aside. Heat a medium skillet over medium heat. When skillet is warm, add bacon. Cook several minutes per side. Remove just before it looks done as it will continue to cook after removed from heat. Drain on a paper towel.
  • Add chicken to skillet. Cook 4-5 minutes per side or until cooked through. Slice in half to check for any pink if necessary.
  • Slice roll or bread of choice in half. Slather each half with a good coating of spicy mustard. Layer with lettuce, chicken and bacon. Top off with remaining roll half. Enjoy!
