Gingerbread Molasses Blondie Bars

I’m so far succeeding at not being sick of the Christmas decorations. I’m sure it helps a lot that we put everything up a week later than usual. I still reserve the right to be sick of it immediately following Christmas. That’s usually when I’m ready for everything to go back to normal. Even though I’m usually itching for things to get put away and cleaned up, I honestly hate the packing up way more than unpacking. Unpacking is fun and full of memories. Packing up is just daunting. Sometimes I wish I could just snap my fingers or twitch my nose and have it all magically go away on it’s own.
Normally when there is a book sequel in the voice of another character, but going back over everything that we’ve already learned… I skip it. Why would I want to reread the same story, just in a different point of view? I’ve skipped several so far, but I finally caved yesterday. I couldn’t get enough of my latest series, so I’ve moved on to This Girl. I obviously wanted to love it since I bought it. I hate paying for books and then not enjoying them at all. Thankfully so far things are working out in my favor. It helps that I really enjoyed the first two. They’re like eating your favorite gingerbread cookie but in a soft and chewy bar. Ridiculously good!

This is quite possibly my favorite blondie bar ever. And that’s saying a lot… because I’ve enjoyed a lot of blondie bars!
If you only make one more thing for the holidays, be sure this is it! A super easy, crowd pleasing dessert!
Gingerbread Molasses Blondie Bars
Ingredients
- 1 C unsalted butter softened
- 1 C granulated sugar
- 1 C light brown sugar
- 1 large egg
- 3 Tb molasses
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking powderÂ
- 1 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/2 tsp ground ginger
- 2 1/2 C all purpose flour
Instructions
- Preheat oven to 350°F. Line a 9x13-inch baking pan with parchment paper. Lightly grease the exposed sides of the pan. Set aside.
- In a large bowl or stand mixer, cream together butter and sugars. Mix in egg, vanilla and molasses. Scrape the bowl as needed. Mix in salt, baking powder and spices. Add 1/2 cup of flour at a time until all flour has been fully encorporated and no streaks remain. Transfer batter to prepared pan. Press into an even layer with a lightly greased spatula or greased parchment paper.
- Bake for 25-30 minutes.
- Allow to cool completely in pan. Pull up and outward on the parchment paper to remove from pan. Slice into even pieces. Store in an airtight container for up to severl days.

Oh my goodness – you read my mind! There have been so many times that I wished I could snap my fingers or twitch my nose and have all the decorations magically packed up too – packing up is no fun – but, if I had a stack of these decadent molasses gingerbread bars beside me, I might just forget how much I disdain packing!
Wouldn’t that be perfect to snap it all away?!
Soft and Chewy bars are the best!! I’m always looking for awesome alternatives to just Cookies and Fudge so I’m definitely making these!

We put our Christmas decorations a week later too and I didn’t put up nearly as many, so like you I’m not sick of them. I’m also happy there won’t be such a mess to clean up after Christmas. These bars look so gooey and chewy, I love gingerbread!

Ooooh those look amazing!! I’d say they are definitely deserving of the extra a’s hehehehe. I might be guilty of packing up all the Christmas decorations on Christmas night (if I’m not too tired). But I totally agree….so much fun unpacking–no fun packing everything back up!

Can I bake in an 8×8″ pan to make them thicker?
You’ll need to adjust the bake time, but it should work just fine. Enjoy!
Yum!!! I always underestimate how much I love anything gingerbread or molasses like. These look amazing!! I made a similar recipe (gingerbread bar) for the bottom of a spices cheesecake I made this year. These bars should be on a cheesecake soon! On my “to make” like! Yum!
