I haven’t even started my Thanksgiving prep for this year but I absolutely do have plans for my leftovers later in the week. Agree or agree to disagree… but, holiday leftovers are worlds better than fresh the day of. The options are practically limitless when it comes to leftovers. Whereas the main meal is what it is. You get turkey. It might be baked, slow cooked or deep fried, but it’s still slices of turkey.

Turkey leftovers can be used in a classic sandwich, soup, casseroles, as finger food… You know what I mean, those moments you’re going to the fridge to get something and grab a piece or two of the leftover turkey while you’re in there.

Almost everything served on Thanksgiving day can be repurposed into a fresh new dish the day or days following. I’ve seen a crazy variety over the years. I’ve gone as far as deep frying the mashed potatoes. It’s a delicious labor of love.

Every year I like to do something new with my leftovers. I’ve shared classic noodle soups to creamy chowders. There have been a variety of casserole type dishes and even a pizza… and now another! This pizza though – it’s a fun twist on a classic dish. Two classic comfort foods mashed up into one incredible dish. Super easy homemade thin crust three cheese leftover Thanksgiving turkey pot pie pizza. It’s a mouthful for sure but a delicious one at that.

How many will this recipe serve?
As written, this will make roughly 1: 10-inch pizza and can serve anywhere from 2-6.

Can I use store bought pizza dough?
Of course! If you’re in a pinch or have a favorite pizza dough to use, it can absolutely be substituted for homemade.

Can this recipe be frozen?
You can definitely make the dough ahead and either chill for up to a few days or freeze even longer. Be sure to bring the dough to room temperature prior to stretching. Of course, as with anything, fresh is always best though!

Can I make this without leftovers?
Absolutely! You can make this with holiday leftovers or from scratch. Many of the toppings can easily be substituted for something else or made fresh. If you prefer chicken instead of turkey, swap it. If you don’t have peas, no worries! Want extra cheese? Go for it!

Can I make substitutions to the ingredients?
This recipe works with the exact measurements and and ingredients listed. However, with savory dishes, spices can always be adjusted to personal preferences. Outside of any alterations I’ve already mentioned, for specific substitution questions, ask in the comments below.

Leftover Thanksgiving Turkey Pot Pie Pizza

Easy homemade three cheese thin crust leftover Thanksgiving turkey pot pie pizza. A fun twist for holiday leftovers!

Ingredients
 

Dough:

  • 1/2 C water, heated to 115°F
  • 1 tsp active dry yeast
  • 1/2 tsp granulated sugar
  • 1 1/4 C all purpose flour
  • 1 tsp salt
  • 1 Tbsp olive oil

Sauce:

  • 1 Tbsp unsalted butter
  • 1 C chicken broth
  • 2 Tbsp all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder

Toppings:

  • 1 C turkey, shredded
  • 2 Tbsp yellow onion, diced
  • 1 Tbsp celery, diced, roughly 1/2 stalk
  • 2 Tbsp carrot, thinly sliced or diced, roughly 1 whole carrot
  • 1-2 Tbsp peas, leftover or canned
  • 2 Tbsp corn, leftover or canned
  • 1/3 C Parmesan cheese, finely grated
  • 1 C whole milk mozzarella, freshly shredded
  • 1/2 C extra sharp cheddar cheese, freshly shredded
  • Green onions, chopped, optional
  • ground black pepper

Instructions
 

  • Heat water to 115°F. Combine water with yeast and sugar. Allow mixture to proof for 5-10 minutes.
  • In a large bowl or stand mixer, combine flour and salt. With mixer running, add yeast mixture, followed by olive oil. Mix until dough just comes together. Knead by hand if necessary. Additional flour can be added a small spoonful at a time if dough is sticky. Transfer dough to a lightly greased bowl. Cover and allow to rise in a warm location for roughly one hour or until doubled in size.
  • Prepare sauce. In a small saucepan over medium heat, melt butter. Mix in chicken broth. Sprinkle with flour and spices. Whisk to combine. Continue gently whisking until mixture thickens, roughly 5-10 minutes. Transfer to a small bowl, pressing plastic wrap to the surface. Set aside.
  • Preheat oven to 425°F. Lightly grease a baking sheet with olive oil. Shape dough to desired size and shape. Spread spoonfuls of sauce over the dough. Sprinkle with Parmesan cheese. Top off with vegetables and turkey. Sprinkle with mozzarella and cheddar cheese. Sprinkle with ground black pepper.
  • Bake for 18-22 minutes or until desired crispness is reached.
  • If desired, top off with chopped green onions.
  • Serve warm.
