What a great post for cheesecake day! How about a white chocolate cheesecake?
I’ve used white chocolate in my peppermint bark cheesecake but there’s always room for more cheesecake ideas… especially when chocolate is involved ;)
These all look amazing! I wanted to make mini Key Lime cheesecakes for my husband’s birthday– would love some help with that!

This may be the best post I’ve read today …. love cheesecake so much! I pinned a few recipes – thanks!
Aww that’s sweet – thank you!
Love all these recipe ideas… I’ve never make cheesecake, sounds like I need to jump on the bandwagon!
Love your site and all the recipes. Last week I bought some stuff via your links, – couldn’t resist the mini cheesecake pan! Was now thinking of getting the set of small pans and also the small one with six holders. My question is this:
do I have to use specific recipes depending on the size, or can a single recipe be used in any of these sized cheesecake pans, adjusting baking time?
Thanks so much for all your wonderful recipes. I like that you can print the photo with them as well.
First of all, thank you! The short answer to your question – yes and no. Totally helpful, right? ;) It’s always easier to convert up in size than down. Sizing down has it’s complications, then again… so does up sometimes. All of my recipes are written specifically for the size they appear here. That doesn’t mean you can’t attempt to adjust them to be a different size but definitely be prepared for trial and error and definitely adjust the baking time. I’d almost suggest typically increasing the bake time by double as you move up the ladder in size, as a general guide but always remember to check baked goods prior to the time specified as your oven might be different etc etc. Let me know if you have any other questions!
Thanks for the reply! I have looked around your site, but can you point me to any small cheesecakes or 4 1/2″ single ones you might have, if they are available on here? If not, no problem, I’ll have a try at making different sizes. I am making the mini ones this weekend. Once again, I love your site and recipes. Thanks for sharing them!
This is the only one I have posted for the 4 1/2″ pans so far http://www.bakedbyrachel.com/2010/04/lemon-cheesecake/ Good luck with the mini cheesecakes!
Oh yum! I’m ready to celebrate :) I just adore cheesecake
