It’s officially cookie season! Hooray! I’m beyond excited for all of the goodies I have planned for this month and I hope you are too! I adore this time of year but it’s easy to become completely overwhelmed by it all too. Which is why a lot of the goodies I’ll be sharing can very easily be made ahead and stashed until you’re ready to bake or baked and stashed for later. Either way, it’ll make this season a breeze for you!

I’ve been super into the holidays this year, more so than usual. It started early in the season and it hasn’t let up. Hopefully I’m not tired of it by the time Christmas and New Year’s finally hits! We actually a bunch of early snow this year and I had half hoped it would stick around long enough to enjoy a white Christmas… it didn’t. Fingers crossed we at least get flurries the day of. It just makes the day that much more magical!

Also, I’ve been sucked into cheesy romantic holiday movies this year. I don’t know what’s gotten into me because I would refuse to watch them in the past. Lifetime and Hallmark holiday movies were just a bit too cheesy for me. Netflix has a ton of new holiday movies and they have just as much cheese-factor as others, but I can’t stop watching! I think it’s either the actors or the goofy storylines or just me being way too into the holidays this year. Either way, I’m not complaining. It’s just odd. I do recommend checking them out there. There are some good ones available this year.

I love slice and bake cookies (aka ice box cookies) so much! They’re a great cookie dough to make ahead and let chill until you’re ready to bake. There’s no need to bring the dough to room temp, like with other doughs. It’s as simple as the name states… slice and bake. Huge bonus, they’re super easy to stack and store or gift!

A classic cookie with a fun seasonal twist… but you can totally eat these year round too! I love the pop of green to add a touch of holiday color. A little sweetness from the chocolate and saltiness from the pistachios. A perfect match!

Slice and Bake Pistachio Chocolate Chunk Cookies

Easy slice and bake pistachio chocolate chunk sugar cookies. A perfect sweet and salty treat to make for the holidays or any time of the year!

Ingredients
 

  • 3/4 C unsalted butter, softened
  • 3/4 C light brown sugar
  • 1/4 C granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 3/4 C all purpose flour
  • 6 oz semi-sweet chocolate, chopped roughly
  • 3/4 C pistachios, chopped **

Instructions
 

  • In the bowl of a stand mixer or large bowl, cream together butter and sugars until light and fluffy. Mix in eggs and vanilla, followed by salt and baking powder. Mix in flour, adding one cup at a time. Continue mixing until fully combined and no streaks remain. Mix in chocolate and pistachios by hand. Blending until evenly distributed throughout the dough. Chill for 15-30 minutes.
  • Divide dough into two equal portions. Shape one piece of dough into a log, roughly 2-2 1/2 inches in diameter. Wrap in wax paper. If available, store wrapped dough log in a cardboard tube. *See notes. Repeat with remaining dough. Store dough logs in the refrigerator for 3 hours or overnight. Dough may be made ahead and stored in the refrigerator for 1-2 weeks or frozen up to a year. 
  • Preheat oven to 350°F. 
  • Line a baking sheet with a silicone baking mat or parchment paper. 
  • Carefully slice 1/4-inch slices, spacing 1-2 inches apart on prepared baking sheet. Return remaining dough to the refrigerator. Bake cookies for 10-12 minutes. Allow cookies to sit on the pan for 4-5 minutes before transferring to a wire rack to cool completely. 
  • Store cookies in an airtight container. 

Notes

*To help maintain a round shape, store wax paper wrapped dough in a cardboard tube. Examples: wrapping paper roll, paper towel roll cut length wise.
**Salted or unsalted pistachios can be used. Salted and shelled (no shells) pistachios were used for this recipe. Use whichever you prefer or can find in the store.
