I have to say, I’m glad vacation is over and school is starting back up. Not because I’m over vacation but this vacation was a major downer. Everyone was sick for the entire time, right up ’till the last moment. Brutal colds and ear infections. Fun fun. I’d officially like to live in a bubble. I swear I’m not going to turn into a germaphobe, but being sick is the pits and happy to put all of that behind us… until next time, because it’s inevitable.

And in entertainment news – I started binge watching White Collar from the beginning. It took me until half way through the first season until I realized one of the main characters is the most recent Superman. What?! (Edited to add: wrong guy, but they look so much alike they could be brothers!) Also, we’re giving True Detective a try. Of course we’re only an episode in so I don’t have much to say about that yet. It always takes a few episodes for me to decide if I really like something or not. That’s what happened with Orange is the New Black. Strange show and definitely takes at least a few episodes to get into, but then you’re hooked on the characters and quirkiness. And of course now I have to wait until something like June for that to start back up. But, in the meantime I have White Collar and all of the new shows starting back up. I like my night downtime, what can I say?! It’s quiet and relaxing. What shows are you most looking forward to starting back up… Downton Abbey, Scandal…?

I went on a mission to make a soup that tastes just like a bacon cheeseburger and had 100% success. If you’re looking for the perfect, creamy and flavorful soup that tastes exactly like your favorite bacon cheeseburger… look no further!

This slow cooker bacon cheeseburger soup has a smooth cheesy base and is loaded with all the fixings from beef to onions, peppers and of course the ever essential bacon and pickles (on the side – or rather top) and more!

Slow Cooker Bacon Cheeseburger Soup

An easy and hearty slow cooker soup that tastes just like your favorite bacon cheeseburger!

Ingredients

  • 1 lb ground beef cooked and drained of fat
  • 15 oz petite diced tomatoes drained
  • 1 C yellow onion chopped
  • 1/4 C celery chopped
  • 1/2 C carrot chopped
  • 1/2 C green bell pepper chopped
  • 3 cloves garlic minced
  • 4 C russet potatoes cubed
  • 1/2 tsp chili powder
  • 2 1/2 tsp salt
  • 1 1/2 tsp ground black pepper
  • 4 C chicken broth
  • 8 oz block cheddar cheese shredded
  • 1 C heavy cream
  • 3 Tbsp flour*

Instructions

  • To the bowl of a 5-6 quart slow cooker add beef, vegetables, salt, pepper, chili powder and chicken broth. Cook on high for 4 hours.
  • When 4 hours is up, stir in shredded cheese. Combine cream and flour until smooth. Pour into soup, stir to combine. Continue to cook for an additional 30 minutes covered.
  • Serve with bacon, pickle slices and additional cheese, if desired.

Notes

Serves roughly 4-6.
*For a lower fat option, substitute ground chicken for beef.
*Gluten free option: substitute 1-2Tb cornstarch for flour.

    We (and by we, I mean me) were sick for most of vacation, too. Gahhhh. Husband looooooves True Detective. I can’t wait for all the shows to restart. Bachelor tonight!!

    I put chopped lettuce, green onions and diced dill pickles in the bottom of my bowl and pour the hot soup over it then top with croutons. Really does add more burger taste. I add chopped raw veggies to the bottom of a lot of my bowls of soup, try Roman. My Hubby calls it “crunchy soup” and LOVES IT.

    I found this recipe on Pinterest and it is SO good! I normally have a love hate relationship with my slow cooker…love the convenience but hate that things usually come out tasting like cafeteria food. Not this. Thank you! You’ve restored my faith in the slow cooker!

    Could this be out on low for 6-8 hours versus the high for 4 hours?

    Can you do this on the stovetop instead of slow cooker? Boil, simmer then add cheese?
