Slow Cooker Guinness Beef Stew
Hearty and flavorful Guinness Irish beef stew, made even easier in the slow cooker! A comforting meal, perfect for St. Patrick’s Day celebrations or any day!
This is a pretty awesome week. Of course there’s the obvious, St. Patrick’s Day. But it’s also my birthday week. In fact, my birthday falls on pi day… 3.14. I usually mean to celebrate with pie but then I forget. This year, I planned ahead and bought a whole bunch of apples to make my absolute favorite apple crumb slab pie. Seriously, it’s the best! There may or may not also have to be cake or cupcakes and another kind of pie… pizza pie.
Also, today is our sweet pup Lucy’s first birthday! Kind of fun that we have the same birthday week. I’m probably going to have way more fun with her day than mine. I get way more enjoyment out of buying for others than receiving gifts. That’s really how it should be. She’s already suspicious that there’s a box full of goodies for her. If you haven’t been following along on Instagram, you should be. I post lots of videos and pictures of her in my stories – daily!
The only downside to this week is that we’re getting slammed with even more snow! We got 19 inches of snow at the end of last week, knocking out our power and damaging plenty of trees. Tomorrow we’re supposed to be getting even more snow. Fingers crossed we manage to keep our power through this storm!
I’m beyond ready for spring!

Slow Cooker Guinness Beef Stew
Ingredients
- 2 1/2 lb beef chuck
- 2-3 Tb olive oil
- 1 1/2 C carrots
- 1 C celery
- 1 C yellow onion
- 3 cloves garlic minced
- 4 C baby yukon gold potatoes roughly 1 1/2lb
- 1 1/2 tsp dried thyme
- 1 tsp ground black pepper
- 2 1/2 tsp salt
- 12 oz GuinnessÂ
- 3 C beef broth
- 1/4 C tomato paste
- 2 bay leaves
- 2 Tb cornstarch
- 2 Tb water
- 7 oz peas drained
- Chives optional garnish
Instructions
- Trim beef of any fat and cut into 1-inch pieces. Pat dry with paper towels and lightly season with salt and pepper. Heat olive olive in a large Dutch oven or pot over medium-high heat. Sear beef cubes on all sides. Transfer cooked beef to the bottom of a 5-6 quart slow cooker. Repeat with remaining beef.
- Prepare vegetables; slice carrots and celery into 1/2-inch slices. Chop onion and mince garlic. Cut baby potatoes in half. Transfer prepared vegetables to the slow cooker. Sprinkle with salt, pepper and dried thyme. Whisk together beef broth and tomato paste. Pour broth mixture and Guinness into the slow cooker. Add bay leaves. Cover and cook on high for 4 hours or on low for 8 hours.
- When initial cook time is up, whisk combine cornstarch and water. Transfer to the slow cooker. Remove and discard bay leaves. Return lid and continue cooking for an additional 30-45 minutes.
- Prior to serving, stir in peas.
- Serve with optional chives and black pepper.

Does this use salted or unsalted beef broth?
I always use original/salted unless otherwise noted.
Can I make this without browning the beef first? Or can I brown the beef the night before and throw it all in the crock pot in the morning?
Browning the meat adds additional flavor but you can absolutely do ahead or skip if you’re short on time. Enjoy! :)

I like a thicker stew, so I tripled the cornstarch/water mixture and it came out perfectly.
