We’re full swing into January. Are your holiday decorations still up? We have 99% of our decorations packed up and stored until next Christmas. The only thing that remains is the tree, which I cannot handle or at least not on my own. That thing is a beast. So heavy and awkward. I don’t hate that it’s still up… it gives the room a nice warm glow. However, it definitely needs to go away sooner than later. Over winter school break we went and saw Jumanji. Such a fun movie, especially if you’ve seen the previous movie. I won’t give any spoilers but if you stick around till the very end, there is a scene during the credits. It gives me hope that there might be another movie coming down the line sometime. I’ve been a fan of Jumanji since the original came out with Robin Williams. And honestly, I really had questions about the remake at first but they have done a great job putting their own twists on the story and general idea of the game. The original is definitely a bit scarier for the younger kids. But, all three are definitely worth a watch if you haven’t seen them yet.

I completely love soup season. That is definitely a thing. The moment there is a chill in the air and you know it’s only going to get worse and stay that way for at least six months… yup, that right there is soup season. So, we’re about halfway through but it feels like it’s only just begun. Once the deep freeze of winter sets in, that’s when everyone seems to truly embrace it. Pulling out slow cookers and dusting them off after having not used them for a long time.

You can absolutely adjust the heat level in a few ways, see the tips and tricks below for some suggestions. I wouldn’t say this is overly spicy… my 10 year old and I handled it quite well. It has a nice heat without being ridiculously hot and uncomfortable. A perfect balance of flavors and heat.

Can I use frozen chicken?
Always use fully thawed meat in a slow cooker, for food safety purposes.

Can this recipe be frozen?
Absolutely! Most soup recipes freeze really well. Keep in mind, cream based soups can occasionally change texture with the freezing process. The overall taste will still be similar. As with most food, fresh is always more enjoyable.

How long can this be stored?
This can easily be refrigerated for 4-5 days. If froze, it will keep for up to 3 months, maybe longer.

Can I substitute anything for the dairy?
Yes! If avoiding dairy completely for health reasons, substitute with dairy alternative milks or coconut milk. Non-dairy vegan cheese can also be used if it is known to melt well.

How spicy is this recipe?
There isn’t an exact answer to that since everyone has different spice and heat level tolerances. It has a nice spice and heat level without being hard to handle. If you are concerned with the level of heat, you can cut back on the spices and reduce the buffalo sauce. Test first and increase the spices as desired.

Can I make substitutions to the ingredients?

Slow Cooker Cheesy Buffalo Chicken Soup

Ingredients
 

Soup

  • 1 1/2 lb boneless chicken breast, uncooked
  • 1 C carrots, chopped
  • 1 C celery, chopped
  • 1 C yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground white pepper
  • 1 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 4 C chicken broth
  • 8 oz Colby cheese, freshly shredded
  • 1/2 C buffalo sauce
  • 1 C heavy cream
  • 3 Tbsp cornstarch

Toppings

  • Blue cheese crumbles
  • Green onions

  • To the bowl of a 5-6 quart slow cooker, add uncooked chicken breasts, prepared vegetables, spices and chicken broth. Cover and cook on high for 4 hours or on low for 8 hours.
  • When initial cook time is up, carefully remove chicken. Shred with forks, set aside. Sprinkle freshly shredded cheese over warm soup. Stir gently to distribute and help melt the cheese. Stir in buffalo sauce. Whisk together cornstarch and heavy cream. Pour into slow cooker. Return chicken to slow cooker, gently stir to combine. Return lid and continue cooking for an additional 30 minutes.
  • Serve warm with optional toppings.
