It feels like forever… we finally got more snow! It should only be 3 or so inches when it’s all over, but it’s something. Most winters we have lots of regular big snowstorms and this winter has proven to be quite the dud so far. I know there’s still plenty of time for big snow… even one giant storm could bury us for a while and March always has something. In fact, there was a March blizzard on my birthday once as a child. It just doesn’t seem quite like winter in New England without a coating of snow, at the very least. So I’m content for now. Plus, I keep thinking about our drought situation… lack of snow or lack of a wet spring could mean trouble this summer. Fingers crossed we’re in better shape by then though!

We’re somehow still managing to find shows to binge but eventually we’re going to run out of good option. It’s also not so much a true binge but more so watching a handful of episodes everyday until we’re done. The longer length episodes plus longer seasons are always a huge bonus. We’re currently watching Agents of Shield. We had been watching when it first came out and eventually stopped watching for whatever reason. Now just happens to be the perfect time to pick it back up, starting from the beginning of course. A fun show for Marvel fans for sure. I only wish there were the occasional Marvel movie character appearances, but it is what it is. Mentions are good enough but more would have been fun. Speaking of Marvel… I can’t wait for all of the new shows and movies coming soon-ish to Disney. I’ve been eagerly waiting for Black Widow since it was first announced, what seems like ages ago at this point. Hopefully the wait will have been worth it!

January through basically March is prime soup season, especially if you live anywhere in the northern regions. Chilly weather means comfort food and soup is classic comfort food. I have so many fond memories of playing outside on a snowy day and going back inside for lunch…grilled cheese and a bowl of hot soup waiting. Cozy, comforting and delicious. Pizza has also always been a favorite of mine and another classic comfort food. So, clearly there needed to be a delicious food mashup with the two.

Reheating notes…
If reheating in individual portions, transfer to a stain resistant and heat safe container to microwave. If reheating in a large batch, transfer soup to a saucepan and heat over medium/medium-low until steaming.

Can I use different sausage or meat?
Absolutely! The hot Italian sausage used in the recipe will give a little kick to it, but you can use a milder sausage or swap out entirely for ground beef, chicken or turkey! You can also use vegetarian pepperoni and meat alternatives for a vegetarian soup.

Can I leave out…
There are ingredients in this soup that can be hit or miss for some people. If you’re not a fan of mushrooms or olives, for example, leave them out and swap in something you do enjoy! Perhaps more peppers or another vegetable. This soup is incredibly customizable.

Slow Cooker Pizza Soup

Ingredients
 

  • 1 lb ground hot Italian sausage
  • 1 C yellow onion, chopped
  • 1 1/2 C green bell pepper, chopped
  • 3 cloves garlic, minced
  • 6 oz sliced mushrooms
  • 5 oz mini pepperoni
  • 4 oz sliced olives, drained
  • 15 oz black beans, drained and rinsed well
  • 15 oz petite diced tomatoes
  • 15 oz tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 - 1 1/2 tsp chili powder, optional
  • 1 1/2 tsp salt
  • 1 tsp ground black pepper
  • 5 c chicken broth, *Use vegetable broth if creating a vegetarian soup
  • Green onions, topping
  • Shredded mozzarella, topping

  • Prepare vegetables and beans. Add all ingredients to the bowl of a 5-6 quart slow cooker, minus the sausage. Begin cooking on high for 4 hours or low for 8 hours.
  • Meanwhile, cook sausage in skillet over medium heat, draining of any fat. Carefully add to the slow cooker. Return lid and continue cooking.
  • When cook time is up, serve warm and top off with optional green onions and freshly shredded mozzarella.
